I know I sound like a broken record here, but I can’t believe how well the recipes in this new Alice Waters book work. Her egg pasta ratio is the only one you’ll ever need: 2 cups of flour, 2 eggs, 2 yolks. A dough made with these proportions comes together beautifully. I rolled it out without even sprinkling flour on it. I’m serving the noodles tonight in a little chicken broth with celery and carrots.
