What is the best way to store cheese? In the past, I kept it in the fridge in a sandwich bag. Then I read that you should wrap it in wax paper or parchment paper, letting air flow in, and put it in the bottom drawer. I did that with the Keen’s cheddar I bought at Murray’s, and look at it after eight days:
It’s dry, chewy, and not fit to be sliced and savored. I can still use it in a melted preparation, but this is disappointing to say the least, especially considering the price of Keen’s! Is it somehow wrong to do what I was doing already?
