I graduated from my beloved Jif about a year ago, and when I taste it now I find it sickeningly sweet. Most natural peanut butters, however, taste like wet dirt, or they are overly salty. PB&C’s is wet but manageable, with just the right amount of salt, and no sugar added or needed. Cream Nut can win all the awards it wants, but this is the real deal. Her egg pasta ratio is the only one you’ll ever need: 2 cups of flour, 2 eggs, 2 yolks. A dough made with these proportions comes together beautifully. I rolled it out without even sprinkling flour on it.
